Chardonnay: 100% fruit (Clone 15) from the Rimu Grove Estate Vineyard.  Grapes are picked by hand and whole-bunch pressed, followed by cool fermentation in 225L French barriques.  The wine is routinely barrel-stirred on full lees for 10-11 months.  A portion of the wine undergoes malolactic fermentation, dependant on the vintage.
