Pinot Gris: This wine is produced from estate-grown or premium selected vineyards.  The fruit is hand-picked and undergoes 100% whole-cluster pressing following a very gentle press cycle.  The juice is fermented in several stainless steel tanks with approximately 20% in conditioned French oak barrels.  The wine is aged sur lie for 4-5 months before bottling.
