Pinot Noir: 100% fruit from the Rimu Grove Estate Vineyard with a mix of seven clones: 10/5, UCD 5 & 6, 114, 115, 667, 777. Grapes are picked by hand, 100% destemmed and allowed to soak on their skins prior to fermentation for 5-7 days. Wine is fermented in small open-top fermentation vats, hand-plunged 3 times daily, then barrel aged in French oak for 11 months. Ideally the wine is bottled unfined and unfiltered.
